The Perfect Thanksgiving Break

Where to even begin after a whirlwind 24 hours?

My Thanksgiving break was nothing short of perfect. Every morning I woke up, drank coffee on my porch, and headed off for my daily dose of CrossFit. Every day I then came home and made the best oats for breakfast (I know I always say that).


Apple cinnamon oats. I topped them with some almond milk and antioxidant trail mix from Whole Foods. After breakfast, me and my main squeeze were able to go on a walk. It was a little chilly some days, but he didn’t mind at all.


My mom made plans to come to Charleston and spend her break with me. We cleaned every nook and cranny of my apartment. We had a small, but perfect, Thanksgiving meal with just enough leftovers to enjoy a second meal later. We went to see Catching Fire, which was nothing short of amazing. To top off her visit, we watched Auburn beat Alabama in the Iron Bowl. War Eagle!

I cannot even begin to describe the scene over here, as I’m sure you can vividly imagine if you love Auburn football. I think I experienced nearly every emotion. At the end of the day, win or lose, I am so proud to have attended Auburn University. It was the best 4.5 years of my life. I would have done just about anything to be there last night.

What I Ate Wednesday WIAW #1

Inspired by Peas and Crayons What I Ate Wednesday, here is my very first WIAW.

Breakfast started off with Coconut Banana Oatmeal and some coffee.



Then there was my mid-morning snack: apples and veggies.



Lunch was my favorite–steamed veggies with a taco bake, if you will. It’s ground turkey with mushrooms, black beans, and onions. I season it with Trader Joe’s Taco Seasoning Mix and then add some Quinoa. Once again, I forgot to take a picture but I love this meal so much that I had plenty of others that I had taken in the past to share with you. This one I actually added Trader Joe’s Cowboy Caviar to it and topped it with some avocado, there are so many options!


Before I worked out I had an Quest Coconut Cashew bar which I inhaled on the way to spinning + body flow. When I got home from working out, I had a smoothie (1 scoop Mocha Mint About Time, half a banana, coconut water, spinach, and ice)


And that is what I ate yesterday! I will post the recipe for the oatmeal later, I believe it’s my new favorite.

Oatmeal Obsession

I am obsessed with oatmeal. I love almost all breakfast foods and could probably live the happiest life of them all if I was restricted to breakfast for the rest of my life. But oatmeal specifically has a special place in my heart.

Banana Nut Bread Oatmeal

– 1 c of water

– 1/3 c of Steel Cut Oats

– 1/2 of a medium banana

– 1 T of ground flax seeds

– 1 tsp of cinnamon

– 1/4 c of egg whites

– 1 tsp of Maple Extract

– Stevia to taste

– 1 T of your favorite nutter butter

– 1/4 c of blueberries


Bring water to a boil. Add in oats, banana, ground flax seeds, and cinnamon. Reduce heat and allow the oats to cook. Remove the pot from the heat and allow to sit for 1-2 minutes. Add egg whites and stir so that the whites are blended. They should not cook. Return to low heat for 5 minutes. Add maple extract and stevia.

Poor in a bowl and enjoy.

I usually top mine with some sort of nutter butter and blueberries but you can let your imagination run wild. This usually holds me over for at least 3 hours, which is important because I am a very cranky person when I am hungry and have no access to snacks.
