My goodness, it’s crazy to see that it has been 6 months since my last post. I haven’t forgotten about my blog nor I have I forgotten about the goals I set last year around this time that I did not complete. I definitely bit off more than I could chew over the past 6 months but I’m starting to get back into my normal lifestyle, whoo hoo! Also, as of May I will be done with graduate school, THANK GOODNESS. That in itself will be such a relief. I’m truly excited to see what next year stores and I have a lot of exciting plans. Nevertheless, this is what the last couple of months has looked like for me:

Hopefully I won’t be so absent but these past 6 months taught me more than I could have ever imagined, and I wouldn’t have had it any other way!
There are two things I cannot believe,
1. Two weeks of summer are done!
2. I haven’t posted anything in months.
The past couple of months have been a whirlwind: teaching + grad school + a second job. I definitely bit off more than I could chew but now that summer is here, I feel so much better. Here are some snaps of summer so far…

This past weekend was nothing short of perfect. My mom came to town late Saturday night. Saturday I went to the dog park, Sunday my mom and I went to the beach, and Monday we went to Savannah. Here are some pictures of the perfect weekend.

I have finally mastered the 2 ingredient pancake that lots of people rave about. It took nearly a year but I got it down and I am in love. There are two key things I continued to mess up. First, use low heat. I usually make it right when I wake up and let it cook while I get ready. Next, use all the batter for one pancake. I tried to make silver dollar size pancakes. Completely unnecessary, use it all.
All you need is a medium banana and an egg. I added two tablespoons of ground flax seed to thicken up the batter as well as some added nutrients and staying power. Mash up the banana, then add the egg (and flax seed if you wish). Spray your pan, I used coconut oil, and pour batter in. Flip the pancake when the pancake is bubbling all over.
I have been topping mine with almond butter and blueberries but tomorrow I think I’ll try strawberries. They have been calling my name in the morning.
Ever since I picked Chance up from his stay at Pooch Palace, he has been exceptionally sweet.this morning I woke up and decided to bake him some biscuits. When I was in college I made biscuits all the time for him. When I moved to Charleston I discovered Trader Joes and Chance is all about heir peanut butter biscuits.
I looked through my pantry this morning and saw a can of pumpkin that managed to go untouched over the holidays. I’m not sure how that happened, but today it met its fate.
Pumpkin Dog Biscuits
2 c Whole Wheat Flour (Plus some when rolling out dough)
3/4 c Pumpkin Purée
1/2 c Rolled Oats
1/2 c Almond Butter
Combine all ingredients in a bowl.
Mix ingredients together. It’s going to take a little muscle work. I wish I would have used my kitchen aid.
Roll the dough out and use a cookie cutter to make biscuits. I rolled my biscuits a little thin. Next time I’ll roll them to 1/4″ thick. Place the biscuits on a cookie sheet and cook at 350 degrees for 12-15 minutes. Recipe should yield 30-36 biscuits.
Let cool and serve up!
I have been having a lot of people asking me if I have goals for 2014, and until this point I hadn’t. Every time I made goals I failed in completing them, miserably. Last night I couldn’t fall asleep and I was thinking about all of the things I want to do in 2014. I came up with this list :
1. Get involved with my local community.
2. Travel to Nashville.
3. Get a waitressing job for the summer.
4. Specifically in CrossFit, I want to be able to do unassisted pull-ups, handstand push-ups, and double unders.
5. Run a total of 365 miles. (This is the scariest one to me, I HATE running. I ran last week for the first time in a while and it was the most awful sight in all of Ohio, maybe even the world.)
2013 was a great year for me. Amongst many great things, I planted my roots in Charleston and met some of the most amazing people. I seriously began my teaching career and fell in love teaching. I found a passion in healthy eating and CrossFit. I found out my dog is heartworm free. Here’s to 2014!
Lately I have been all about a specific combo in my oatmeal. Dare I say this, but it could be my favorite yet. It’s simple, delicious, and nutritious.
Here is what you’ll need:
Cinnamon Raisin Oatmeal
– 1/3 c Steel Cut Oats
-1 c Water
-1/4 tsp cinnamon
-2 egg whites
-1 T Peanut Butter Co. Cinnamon Raisin PB
– 1 T Chia Seeds
-1 packet Stevia
– Splash of Almond Milk (optional)
Directions: Cook oats, water, and cinnamon. Once oats are cooked, remove from heat for 2-3 minutes. Stir in egg whites. Place back on low heat for 3-5 minutes, until egg whites are cooked. Add PB, chia seeds, and stevia. Allow PB to melt in. Pour into a bowl and splash with almond milk.
I recently started doing this whole “splash with almond milk” business, and it is lifechanging. TRY IT. Specifically, I splurged on this almond milk by Califia Farms:
I will never use anything else. It’s amazing. I’ve never been an almond milk person, but this makes such a difference. I put it in my coffee in the morning and it adds such a wonderful flavor. Charleston friends can find it at Harris Teeter!
Things I am loving:
I never understood people who talked about CrossFit how they were so addicted to it. It took about two weeks for me to experience this and now I cannot imagine working out any other way. I have never been in better shape and I have only been doing it for about a month and a half.
Every day I find something new I love about this city. There is nothing I don’t like. I’m so blessed to live in such a wonderful place.
3. Sweet Potatoes
I have been all about sweet potatoes recently. On Sunday’s I cut up a bunch of sweet potatoes and toss them in coconut oil and cinnamon and bake them. I usually eat them at lunch.
But then there are Alexia’s Spicy Sweet Potato Fries. These are amazing and in a world all of their own. I tried to make them on my own but they didn’t even compare. I love eating these with an omelet or grilled chicken.
I love that it is football season. I love my Auburn Tigers as well as high school and pro football. I cannot wait for it to get cool enough to make chili and watch football games.
Call me crazy but this past weekend I had a sudden urge to complete a stadium workout. I was toying around with many different ideas until I came up with this workout. A couple of my friends and I completed this workout yesterday after school.
Upper Body: AMRAP 15 minutes
– Up/Down Aisle 1
– Bicep Curl with Band (5 on each side)
– 10 Tricep Dips
– Up/Down Aisle 1
– Shoulder Raises with Band (5 on each side)
– Bent Over Row with Resistance Band
Lower Body: AMRAP 15 minutes
– Up Aisle 1, sideways, left leg leading, then down Aisle 1
– 10 Squats with Band
– 10 Lunges (5 on each side)
– Up Aisle 1, sideways, right leg leading, then down Aisle 1
– Walk Backs with Band (5 on each side)
– 5 Push-ups
It was a great workout and running up the stairs on the side of your leg was a killer. I woke up feeling great this morning and plan on doing more workouts like these in the future. The feeling may have also been from a fabulous dinner last night with friends. For the past two Tuesdays my friends and I have had pot luck dinners and grilled out at each others houses. Everyone has been contributing somethings and it’s been a perfect way to enjoy a Tuesday evening. Last nights dinner was especially delicious.
I was so excited about the dinner that I completely forgot to take a picture of it before I started. This is the best picture I could salvage from having already gone to town on my dinner. The dinner included grilled chicken, fruit salad, a veggie salad, and Greek quinoa salad. So many salad variations and each one was on point. It was all delicious and a perfect summer dinner. Plus we had cookies for dessert.

I love carrot cake but I don’t love the way I feel after I eat an entire cake, and let’s face it, if I’m let lose around one there is a high probability that that will happen. Last night I got crafty in the kitchen and made these yummy energy bites for dessert or before workouts. Usually I eat a Quest bar before I work out but for some reason I have been wanting dates lately.
1 c of baby carrots
1 c of almond meal
15 pitted dates
2 scoops of Vanilla Whey Protein (I used About Time)
2 T Chia Seeds
1 T Cinnamon
1.5 c Rolled Oats
1/4 C unsweetened, shredded coconut
Directions: Combine all ingredients into the food processor except for oats and coconut. Once well blended, it should be mushy, add oats and blend more. You may need to add more oats to thicken it up. Transfer into a bowl and refrigerate for at least 30 minutes. Roll into balls and roll in coconut. Refrigerate for 4 hours or overnight.
Keep these babies refrigerated throughout your week. They are perfect for dessert, to eat before you work out, or as a midday treat.

Substitutions: If you don’t have almond meal, you can use almonds. Also, if you don’t have Chia Seeds but had ground flax, that’s a great substitution as well!
